Quick recipe for Yummy Butternut squash Risotto
Dish: Butternut Squash Risotto
Ingredients:
- 1 T olive oil of choice
- 4 cups veggie broth
- 1 t salt and pepper, more for taste
- 3 cups assorted greens
- ½ cup onions, chopped up
- 2 cups risotto rice
- 1 t coriander
- 2 cups butternut squash
- 1 package of white wild mushrooms
- ½ t oregano
- 2 T yeast
- 1 diced red pepper
- ½ cup white wine
Directions:
- Sauté and add oil for five minutes, adding in rice, broth, mushrooms, spices, and wine
- Close lid and then cook for 5 minutes, using NPR
- Put in the rest of the ingredients and mix it for 5 minutes. Let it thicken, and then serve it warm.
You can also prepare this before and have it for a meal for great results too.
